Cheesy Biscuits



Not so far from my apartment, the Fightin’ Texas Aggies are playing their first football game of the season. For a couple hours this afternoon, I watched a sea of maroon flow towards the stadium as I sipped ice-cold beers from the air-conditioned 11th Floor of Rudder Tower (aka, The University Club). Let me tell you, that’s the way to tailgate when it’s 100 degrees out. Sadly, the buffet wasn’t entirely my jam (except for the cookies and brownies, obvs), so I needed to whip up a snack to soak up the aforementioned beer that’s sloshing around in my belly. These cheesy biscuits are EXACTLY what I need to accomplish that task, and they’re easy enough that I can even make them when I’m feeling… sloshy. And the game? Oh, I don’t know. Tickets are expensive and I would rather watch Kardashian re-runs anyway.

These biscuits only have a couple tweaks from the original recipe, and it was noted that substitutions could be made to get different kinds of biscuits. Right now, I don't have the focus to get fancy with these things, so deal.

Cheesy Biscuits
Slightly adapted from Simply Recipes

2 cups + 2 tbsp all purpose flour
¼ tsp chili powder
¼ tsp salt
½ tsp freshly ground black pepper
2 tsp baking powder
7 tbsp cold butter, cut into little chunks
2 scallions, finely chopped
3 oz grated parmesan
1 cup buttermilk
big, grainy sea salt



1. Tear yourself away from E!s Kardashian marathon when there's a commercial, you won't miss much. Drink some water. Preheat the oven to 425°F. 

2. Whisk the flour, powders, salt, and pepper together. Add the little chunks of butter and mix until well-coated. Add the scallions and parmesan and mix until well-coated. Add buttermilk and mix until it comes together. 

3. Turn out dough onto a lightly floured surface and knead a couple times until it looks like ingredients are evenly distributed (if dough has gotten a little warm by now, stick it back in the fridge for a couple minutes before rolling). Roll into an 8x8 inch square and cut into 2x2 inch squares (16 total!). Top with sea salt and bake on foil-lined baking sheet until the tops turn golden, 12-16 minutes. 

4. Let cool for a couple minutes, then sit and eat. You can clean up after the healing powers of the biscuits have done their magic.
